肉料理とはちみつ

はちみつは、魚料理にも、もちろん、大活躍します。はちみつには、砂糖と異なり蟻酸（ぎさん）という酸が含まれています。蟻酸は、赤ありやはちの体内にある刺激性の酸です。はちみつの、砂糖とは異なる、独自の性質といえるでしょう。
このはちみつに含まれる酸が、魚のにおいの原因を抑える働きをします。またはちみつの糖質の大部分を占める、ブドウ糖と果糖は、魚のたんぱく質に含まれるアミノ酸と反応し、魚独特の臭みを抑制する働きもするのです。

健康のためにももっともっと食べていただきたい魚料理。はちみつを使うことで、魚嫌いのお子さんや、魚のにおいが苦手という方がもっと楽しく魚を食べられるようになれば、と思います。

たとえば、サーモンのマリネにはちみつを加えてみてはどうでしょう？　はちみつにもいろいろありますが、マリネに使うのならば、みかんのはちみつなどがいいかもしれませんね。柑橘系のさわやかな香りと、少し甘酸っぱい風味が、マリネ液の酢のすっぱさに甘みとさわやかさをプラスして、おしゃれな料理にしてくれるのではないでしょうか？

本格的　サバとベーコンのワイン煮のレシピ

◆材料（2人分）
●サバ（切り身）・・・１／２尾
●ベーコン・・・2枚
●玉ネギ・・・１／２個
●トマト・・・１／２個
●オリーブオイル・・・大さじ２

☆調味液
●スープ・・・１／２カップ（固形スープの素１／２個＋分量の水）
●白ワイン・・・１／２カップ
●ローリエ・・・1枚

●刻みパセリ・・・適宜
●塩、コショウ、小麦粉・・・適宜

＜つくり方＞
◆下ごしらえ
１．サバは4等分のそぎ切りにし、全体に塩、コショウを軽くふり、小麦粉を薄くまぶして、余分な粉をはたいておきます。
２．ベーコンは8㎜の長さに切り、玉ネギ、トマトはみじん切りにします。

◆調理
３．圧力鍋にオリーブ油を熱し、１のサバを入れて両面をこんがりと焼き、いったん取り出します。
４．３の圧力鍋で、ベーコンをさっと炒めてから、玉ネギを加えて炒め合わせます。
５．４にトマトを入れて１～２分炒め、スープ、白ワインでのばし、３のサバを戻して、ローリエを加えます。
６．ふたをして強火にかけ、圧力がかかってきたら（高圧）弱火にし、３分加圧して火を止めます。自然に圧力が下がるのを待ちます。
７．圧力が下がったら、ふたを開けます。中火にかけ、塩、コショウで味をととのえ、少し煮詰めます。煮汁が少なくなってきたら、小麦粉の水溶き（大さじ１／２）で、とろみをつけます。
８．器に盛り、刻んだパセリをたっぷりと散らして召し上がれ
